The winged cannon beetle
poorly made image I did in probably 5 minutes to get a general concept down
Health: 2000 (same as normal cannon beetle)
Scientific name: Granitus ascella
(Granite Wing)
family: Lithopod
Carry weight: 30
Max carriers: 50
Seeds: 50
pokos: 20 (75 if in a challenge?)
now that we have the stats away, here's the attack methods
it flies around it's arena either bursting your pikmin with fast shots that shoot a single area (indicated by a small suction animation from the blowhole and facing the direction it will fire) or it will launch a large boulder that homes onto you and deals the same damage as the decorated cannon beetle.
Combat
it is invulnerable like it's ground cousin but Unlike it's ground counterpart it's blowhole is not it's weakness. in order to damage it wait for it to shoot a boulder, then get it to the ground by weighing it down with pikmin (20 pikmin should do the job, but it will start to throw them off after 10 so you have to be fast, but you can get 10 on then burst the last 10 onto it after the boulder is on the ground) after it lands you have to lead the boulder into it, cracking the shell. It will then fly up, repeat once more to damage it's wings preventing it from flying. After it's wings are damaged it will act similarly to the normal cannon beetle except you have to lead the boulder into it one more time, revealing it's soft internal body it is then vulnerable and you just need to deal the 2000 damage to kill it, but if you use an ultra-bitter spray on it the beetle will revert to the previous state (same with after the first hit, but not after the 2nd) after killing it you can take it's body back to the onion/ship for your pikmin/pokos.
Possible dungeon
this dungeon would likely be a large mostly vertical one where you need to go up a tree or plant of some form with the cannon beetle at the top (vines are the floor transition?) with after taking X amount of time the cannon beetle will spawn in the air (too high up to be hit by pikmin) and will fire it's attacks at you or your pikmin squads. tunnels and tight corridors are safe from the cannon beetle unless you are at the mouth of them where it's homing boulder can hit you.
this is my first enemy concept, so any advice would be welcome!
